Mmm, More Mario Magic

Marinated Tuna Sicilian Style with Scallion Frittata:



This was pretty quick and tasty. The sushi-grade tuna gets cut into small cubes and is then blanched quickly, then marinated in olive oil, red wine vinegar, garlic, mint, oregano and red chili flakes. The frittata is made like any other frittata. This one has six eggs, half a cup romano cheese, half a cup of sliced scallions, salt and pepper. The book says you can make it a couple hours in advance and serve it room temperature for brunch or something. I think that would be a great idea.
