Well, I finally got grapes this morning. 260 pounds of cabernet sauvignon. I crushed and destemmed at the vineyard, then brought the must home and measured brix, specific gravity, pH and total acid. I added sulphur dioxide and then innoculated the must with bordeaux yeast. Hopefully I'll start seeing some activity tomorrow! Yay wine!
