Pressed Skins

I pressed my cab sauv today. There's always something new to learn in zymurgy and today's lesson was: Refractometer readings are skewed in the presence of alcohol. So, while I thought my wine still had some fermenting to be done, it was actually fermented dry according to the hydrometer! In light of this, I called a guy I had read about on Craigslist and rented a press from him and pressed out about 16 gallons of wine. I pressed pretty gently because I wanted to try making a second run wine. I took the pomace out of the press, put it back in the fermentor, added some water, sugar and acid and it should start fermenting away again tonight. This is definitely a home winemaker ONLY practice, but I heard it makes a pretty good, light bodied wine and I wanted to experiment and I probably only lost about two gallons of press juice, so why not? For ten bucks I might have a pretty decent quaffing wine, and if not, I lost ten bucks. Win win.

Do you just do wine or do you do beer too? We plan to start doing both. Although the wine will have to wait until I've collected a few more bottles.

Actually I usually do beer. I just started winemaking last year but I've been making beer for five or six years. If you have a wine tasting room near you, they will sometimes hold onto bottles for you. Some restaurants will do it too.
