Man, slow day today. And LJ has been slow too. Slow and low that is the tempo. Monday is going to be a full day, and that's the last I'll speak of monday until then. I HATEHATEHATE talking about or hearing people talk about work from friday evening until monday morning. I mean, weekends are to relax my homies.

I still haven't decided what I'm going to make for tomorrow. I'm thinking fajitas though. Everybody likes fajitas. I need to get the meat marinating tonight though. Maybe I'll pick up a case of corona and have a hispanic cooking night tonight. Everyone is all better from having colds, we have gigs of salsa music on our computers. Yeah! Fun! Me and mamacita, cookin' it up in the kitchen, latino style. I need to work on a new salsa recipe, too. I haven't been happy with my salsa for a few months now. I think I'm going to transition to a salsa fresca type salsa from now on. SeaDiver and my sister's boyfriend both make a really good one. I'm going to have to steal the recipes...and maybe add a chipotle in there. Yeah, that's the ticket.

In other news, looking forward to seeing people this weekend. Today was a beautiful day, let's hope it stays this way through the weekend. I'd love to get out on the...shit, the back deck. We have no umbrella, it fell apart this winter. And the back deck is DIRTY! How embarassing. Well, I know what I'm going to be doing after work. Which is in about 45 minutes. Aaaahhhhh yeeeaaaah! WEEKEND!

I love steak fajitas! My new thing is to use my George Foreman Grill!

For my salsa I like to use a lot of different colors of bell peppers (red, orange, yellow & green). I wasn't happy with it until I added that.

I marinate chicken and steak...oooh, we have shrimp, too! Usually in lime juice or vinegar and some other seasonings.

Shrimp on the grill is dramatically improved with a nice brining in salt and sugar water. Keeps 'em plump and juicy.

I love shrimp that are brined and marinated in Tiger Sauce (spicy-sweet hot sauce in the hot sauce section of your local grocery store) and grilled. Yummy.

Well, it's different every time. I normally use a chili blend I get from sfherb.com, garlic, sometimes a beer, sometimes a jalapeno or serrano, sometimes some oil, sometimes some cumin. That's why I didn't say what exactly. Sowwy. The important thing is to marinade them in lime juice or vinegar or both to break down the steak. Tough fajitas are gross.

Skirt steak is brilliant. Flank steak is also good but much more expensive. Either way, just remember to cut against the grain. I like a simple lime juice and garlic marinade, and then grill it over a Really Fucking Hot™ charcoal fire. Grill some onions and poblano peppers while you're at it.
