This morning for breakfast I made a frittata for the first time. Damn, it was good! I got the recipe from hip_domestics and modified it a little. Thanks to whoever recently suggested that [to someone else on my FL]. Anyway, here's how I cooked it:

Preheat your oven on broil. In a cast iron skillet, heat up a couple teaspoons of olive oil and sautee/fry about 1/4 of an onion, minced and about 1/4 lb hot copa, chopped. When that's cooked, turn the heat to low. Beat six eggs with about 1/4 cup milk and salt and pepper and pour that into the pan. This is very important: DO NOT STIR OR TOUCH IN ANY WAY once you pour the eggs in or else it will stick. Sprinkle in a chopped up avocado and some shredded cheese. Once the sides start to firm up and come away from the pan sprinkle some more cheese on top then put in the oven for about five minutes. When it comes out it's beautifully golden on top and all puffed up. Man, it was delicious. Next time I'll add in some chopped green onions and maybe some tomatoes. I sliced the one I made today into 1/4s and one wedge was enough for each of us. I ate another wedge for lunch. I used a 10" skillet for this and it fit perfectly. I'll definitely be making this next time we have guests overnight and I'll increase it to 10 eggs and use a 12" skillet.

If you can't get copa, I'd use capicola, pancetta, prosciutto, bacon, sausage or even salami! Also, here's some other things that might go well in it: chopped bell peppers, olives, basil, GARLIC, cooked hash browns, pine nuts, those fried onions you use for green bean casserole, jalapenos, I don't know, there's tons of things you could toss in there!

Frittata!! I love that stuff!

We made it at pregnancy group one night, I think we also put shredded potato in. It was very nummy..

Yum! I've always been scared of frittatas...they seemed deceptively easy.
